Serves 4 using measurements below!
Ingredients
- 3 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Balsamic Vinegar
- 1 Pound Boneless, Skinless Chicken Breasts (Trimmed)
- 1/2 Tsp Salt
- 1⁄2 Tsp Black Pepper
- 1 Pound Baby Potatoes (Halved Lengthwise)
- 1⁄2 Cup Low Sodium Chicken Broth
- 1⁄2 Tsp Ground Pepper
- 1 Large Lemon (Sliced & Seeds Removed)
- 1 Tbsp Chopped Fresh Tarragon
- 6 Cups Baby Kale
- 4 Cloves Garlic (Minced)
Directions
- Set the oven to 400 degrees Fahrenheit.
- In a large cast-iron pan set over a moderate flame, heat 1 Tbsp of Extra Virgin Olive Oil. Season the Chicken with 1/2 Tsp of Salt and 1⁄2 Tsp Pepper, and 1 Tbsp Balsamic Vinegar. Stir to coat.
- Cook for about 5 minutes, flipping once until both sides are browned. Place on a platter.
- Add the Potatoes, Salt to taste, and add 2 Tbsp of Extra Virgin Olive Oil to the pan.
- Cook the Potatoes (cut side down) for 3 minutes or until golden.
- Add the Chicken Broth, Tarragon, Lemon, & Garlic.
- Put the Chicken back in the pan.
- Place the pan in the oven and bake the Chicken for about 15 minutes until the potatoes are soft.
- Add the Kale to the mixture and roast for 3 to 4 minutes or until it has wilted
- Serve & Enjoy!
