Serves 4 using measurements below!

Ingredients

  • 1/4 Cup of Extra Virgin Olive Oil
  • 8 Large Eggs
  • 1/4 Cup Unsweetened Almond Milk (or milk of choice)
  • 1/4 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1/2 Cup Cooked & Crumbled Gluten-Free Breakfast Sausage
  • 1/2 Cup Chopped Fresh Spinach
  • 1/4 Cup Diced Red Bell Pepper
  • 1/4 Cup Shredded Cheddar Cheese (or cheese of choice)

Directions

  1. Spray Extra Virgin Olive Oil into a 12-cup muffin tray and preheat the oven to 375°F (190°C).
  2. Whisk the eggs, almond milk, salt, and black pepper until smooth in a large bowl.
  3. Cooked breakfast sausage diced red bell pepper, shredded cheddar cheese, and spinach mixed thoroughly.
  4. Fill each muffin cup about 3/4 full with the egg mixture using a 1/4 cup measuring cup.
  5. Bake the egg muffins for 18 to 20 minutes until they are set and have a golden brown top.
  6. Before removing them from the muffin tin, let them cool for a few minutes.
  7. Serve hot, and enjoy.
