Serves 3 using measurements below!

Ingredients

  • 2 Tbsp Extra Virgin Olive Oil
  • 1- 1⁄2 Cups Ripe Tomatoes
  • 6 Slices Italian or French Bread
  • 6 Basil Leaves (Thinly Sliced)
  • 2 Cloves of Garlic (Peeled and Left Whole)
  • Salt (To Taste)
  • Freshly Ground Black Pepper (To Taste)

Directions

  1. Slice tomatoes in half, and remove the seeds. Cut tomatoes into small cubes and add in a medium bowl with basil, 1 tbsp of Extra Virgin Olive Oil, a pinch of salt, and a bit of black pepper. Mix well and let them rest for 10 minutes.
  2. In the meantime, preheat an outdoor grill or a grill pan to moderate heat. Spray some Extra Virgin Olive Oil on bread slices and Toast them for 2 to 3 minutes on each side or until grill marks appear.
  3. Rub the garlic cloves on both sides of the hot bread.
  4. Toss the tomatoes again; taste and season with additional salt or pepper if needed. Spread a generous amount of mixture on each slice of bread.
  5. Enjoy!
