Serves 4 using measurements below!
Ingredients
- 1/2 Cup of Extra Virgin Olive Oil
- 2 Tbsp of Balsamic Vinegar
- Lime Juice (1 Lime)
- 1lb of Boneless/Skinless Chicken cut into strips
- 1 Cup of Julienned Red Bell Pepper
- 1 Cup of Julienned Green Bell Pepper
- 1/2 Cup of Julienned Onion
- 1 Tsp of Chili Powder
- 1/2 Tsp of Smoke Paprika
- 1/2 Tsp of Garlic Powder
- Salt & Pepper to desired taste
Directions
- In a large mixing bowl, add the Chicken Strips, 2 Tbsp of Extra Virgin Olive Oil, Chili Powder, Smoked Paprika, Garlic Powder, Salt, & Pepper and toss to coat the Chicken with seasoning
- In a large skillet, heat the remaining Extra Virgin Olive Oil over moderate flame
- Cook the chicken strips in the skillet for 5 to 7 minutes, or until browned and cooked
- Combine the Red and Green Bell Peppers and Onion with the Chicken in the pan
- Sauté the Vegetables for 3-5 minutes
- In a small mixing bowl, whisk together the Balsamic Vinegar and Lime Juice
- Pour the Balsamic Glaze into the skillet with the Chicken and Veggies
- Toss everything together until evenly coated
- Plate & Serve while hot and enjoy! 🙂
