Grilled Chicken and Feta Greek Salad

Serves 4 using measurements below!
Ingredients
- 1/4 Cup of Extra Virgin Olive Oil
- 1 Tbsp of Balsamic Vinegar
- Salt & Pepper
- 1lb of Boneless/Skinless Chicken Breasts
- 2 Cloves of Minced Garlic
- 2 Tbsp of Lemon Juice
- 1 Tsp of Dried Oregano
- 1/4 Tsp Red Pepper Flakes
- 1/2 a Red Onion Thinly Sliced
- 2 Cups of Halved Cherry Tomatoes
- 1 Diced English Cucumber
- 1/2 Cup of Kalamata Olives (pitted)
- 1/4 Cup of Chopped Parsley
- 1/4 Cup of Crumbled Feta Cheese
Directions
- Preheat the grill to medium-high heat
- Season the Chicken w/ Salt & Pepper
- Whisk the Extra Virgin Olive Oil, Minced Garlic, Lemon Juice, Balsamic Vinegar, Oregano, & Red Pepper Flakes in a small bowl
- Place the Chicken on the grill and brush with some of the Dressing created in Step 3
- Grill each side for 6-8 minutes or until fully cooked
- Remove from the grill and let them rest for 5 minutes
- Slice the Chicken into bite-sized pieces
- Combine the Red Onion, Tomatoes, Cucumber, Olives, Parsley, & Chicken in a large bowl
- Drizzle with the remaining Dressing
- Sprinkle the Feta Cheese over the top of the salad as desired
