This dish is a perfect combination of tender pasta, juicy tomatoes, aromatic garlic, salty olives, and tangy feta cheese, all baked to perfection in a rich tomato sauce. By using only Mediterranean Diet approved ingredients, not only will this dish leave you full and satisified but it is also a much healthier alternative to traditional pasta dishes loaded in unhealthy saturated fats and vegetable oils.

Serves 4 using measurements below!
Ingredients
- 1 Tbsp of Extra Virgin Olive Oil
- 1 lb of Penne Pasta
- 1 Onion (Chopped)
- 2 Cloves of Minced Garlic
- 1 Can of Diced Tomatoes
- 1/2 Cup of Kalamata Olives (Pitted & Chopped)
- 1/4 Cup of Chopped Parsley
- 1/4 Cup of Chopped Basil
- 1/2 Tsp of Dried Oregano
- 1/2 Tsp of Salt
- 1/4 Tsp of Black Pepper
- 4oz of Crumbled Feta Cheese
- 1/4 Cup of Grated Parmesan Cheese
Directions
- Preheat the oven to 375ยฐF
- Prepare the Penne Pasta noodles as directed on the packaging, drain, & set aside
- Place a pan over medium heat & add the Extra Virgin Olive Oil, Minced Garlic, & Chopped Onion until aromatic and tender
- Add the Diced Tomatoes, Chopped Kalamata Olives, Parsley, Oregano, Basil, Salt, Black Pepper, & stir until combined
- Add the cooked Penne Pasta to the pan and stir until combined
- Transfer the pasta from the pan to a medium sized baking dish
- Spread the Crumbled Feta Cheese & Grated Parmesan Cheese over the top
- Bake for 25 minutes or until the cheese is melted &bubbly
- Garnish with additional Chopped Parsley as desired
- Wait for it to cool then plate, serve, & enjoy! ๐
